The Brand

Milan Moravcik, a qualified chef from the Czech republic spent many years working in hotel kitchens including the luxury Ballynahinch Castle in Galway before he decided his time was better spent on his own creation – the honey bee cake. MND Food was set up in 2014 by Milan and his partner Diana Bezdekova with a view to producing ready-made natural cakes, inspired from a 100-year-old European recipe.

The company currently produces two cakes: the honey bee cake with hazelnuts – a sponge cake layered with honey and caramel filling, decorated with milk chocolate and hazelnuts; and the Cocoa Honey Bee cake – a cocoa sponge cake layered with honey and milk coconut filling, decorated with white chocolate. Both cakes are free from additives, colours and preservatives and Milan promises they’ll deliver a ‘wow’ factor once they pass your lips. “I’ve yet to meet someone who doesn’t like them.” despite being in business two years, Milan only recently launched the cakes.

“It took us a long time to perfect the recipe and we wanted to ensure it was absolutely right.” In fact, it took burning a cake to make Milan realise what he needed to include in his cake-making method. “If I hadn’t burnt the cake, I probably wouldn’t be here now. When I was developing the recipe, there were loads of birds around my house, waiting for another honey cake to be binned. I spent thousands of euros to feed the birds,” he laughs.
